RECIPE: Cinnamon Raisin Strawberry Toast

Strawberry Toast, if you’re not eating this you are most definitely missing out on a delicious light yet filling breakfast.

I created this dish on a whim the other day while feeding my family and I loved it so much I decided it was something I wanted to share. This dish takes all of 5-10 minutes so it’s the perfect go-to meal for when you don’t feel like spending too much time in the kitchen.

This recipe makes use of some of the local ingredients available to me on the Central Coast but I invite you to use what’s on hand for you. If you’re asking why I’m putting sour cream on bread? If you really think it, sour cream is essentially mascarpone without the thickness. If you’re unsure of using sour cream, feel free to use mascarpone, cream cheese, or even cottage cheese.

Cinnamon Raisin Strawberry Toast:

Prep: 5 Min | Servings: 1

Ingredients:

  • 2 slices of Cinnamon Raisin Bread (I used sunmaid ) ⁠

  • 1/2 cup sour cream (or cream cheese)⁠

  • 5 large strawberries, sliced⁠

  • 3-5 leaves of fresh basil⁠

  • 1 Tb Poppyseeds ⁠

  • 1 Tb Raspberry Olive Oil (or your preferred sweet flavor/unflavored)

  • 1 tsp salt ⁠

Directions:

  1. Toast your bread to your preferred level. Spread with sour cream (or cheese). Layer your strawberries, sprinkle with salt and poppyseeds. Add torn pieces of basil, and drizzle the olive oil. ⁠
